Whew! What a week! If this were a movie it’d be a wrap for me.
Anyone else felt as if the last few days/weeks/months have been coming at them full throttle?!
There were writing deadlines, workout goals to hit, recipes to test, friends to see, Buck to do…. The list just went on and on! Anyway, your girl is now all the way tired and I think I deserve an award just for effectively adulting. Preferably something that involves wine, or chocolate, or even better, wine AND chocolates!
I’m writing this as I reflect on the past week and y’know what? When you’re little no one tells you just how much responsibility you’ll have as an adult. Your parents’ friends just smile and ask you silly things like “what do you want to be when you grow up?”
I often thought, “Like, how am I supposed to know Karen, I’m 4.”, but we act polite and reply cute, random things like “a doctor”, “an astronaut” or, with way too much enthusiasm “a stripper!!” lol well at least my cousin said that once.
She didn’t know what it was at the time, just heard her mum argue with her dad that that’s where all their money was going to, and in her child’s mind, she thought “Money buys cookies, so more money, more cookies. I’m gonna be a stripper yay!”
To be honest, I was gonna say a stripper too (more cookies is always a good idea), but the mortified look on her father’s face kinda let me know that parents don’t exactly approve of that occupation.
Anyway, cousin Cara is now grown, an actual stripper, and makes more money in a week than I do in a month by raking in ALL the dough at popular strip clubs in every city, and her stage name is ‘Cookie, go figure… and yes, her dad blames himself, lol.
So in honor of my amazing cuz, and because we all deserve a little treat, (Hey, it’s Spooky season), below is my recipe for decadent Keto double (Ds) chocolate cookies with a hint of wine, cause, why the hell not?
Cara’s Cookies
2 tablespoons almond flour
1 teaspoon coconut flour
1 teaspoon 100% unsweetened cocoa powder
3 tablespoons sugar-free chocolate chips
A pinch of black or pink salt
1 tablespoon grass-fed butter, softened (Hide this if you’ve got a Tony Toast in your life! :/)
2 & 1/2 teaspoons monk fruit blend sweetener (I suggest Lakanto brand)
1 teaspoon of your fave red wine. *Optional
Method
Preheat oven to 350.
Combine all dry ingredients in a bowl and mix with a fork, then add alcohol if desired and continue mixing until cookie dough is formed.
Shape about a tablespoon of dough into small balls then flatten and place on parchment paper.
Transfer a ton of these on the parchment to a baking tray and bake for 5 to 10 minutes.
Cool cookies, grab a glass of wine, become one with your couch, and munch away!
Then maybe try on some sexy (read stripper) outfits in preparation for Halloween.😈
